If you could only eat one thing for the rest of your life, what would it be? You know that question that gets thrown around at parties and family dinners? Is it strange that I would consider this salad as a contender for the “only-eat-one-thing-for-the-rest-of-my-life” meal? Some people may choose pizza, their favorite flavor of ice cream or a steak. I think I might choose souvlaki chicken salad. Yep, I love it that much. Although, I’m happy to know that I will never have to make that choice. Could you imagine only eating one thing for the rest of your life? That would be so boring!
The office building I work at downtown has a cafeteria that serves this salad made-to-order every Wednesday. I always make my lunch plans around it. I silently pray that the guy who makes the salad that day will be in a great mood and therefore load up my salad with extra feta cheese and dressing. Then I’ll meet my sister at our table, and we will proceed to devour these huge chicken souvlaki salads like we haven’t eaten in months. It’s seriously fantastic. I wish they served it all 5 days during the work week. There’s something about the combination of salty feta cheese with my favorite fresh vegetables and a light dressing that gets me every time.
For CSA week 4, I received tons of lettuce including a head of Blushed Butter Oaks lettuce, a head of romaine, and a huge bag of salad greens (along with chioggia beets, garlic scapes, and swiss chard). Plus, the herbs in our garden have been growing so quickly that it was time to use up some oregano. I knew I had to put chicken souvlaki on the menu. The chicken is marinated with a bunch of fresh oregano, spices and some lemon juice. The key to making this chicken delicious is to grill it over high heat so that it gets those charred spots.
Instead of the traditional oily Greek dressing, I decided to try something new. I used some fat-free yogurt we had in the fridge and loaded it up with fresh and dried herbs. It’s a deliciously creamy dressing alternative for this Greek salad. And it’s pretty great for you!
This salad comes together so fast, and it’s so fresh, healthy, and delicious that you can eat a ton of it without feeling guilty. Bring on the souvlaki!
