No Bake S’mores Bars
These s’mores bars bring me back. But, not to my days roasting marshmallows at Girl Scout camp. Actually, these bars remind me of college. You see, they happened to be on the dining hall dessert menu every Thursday, and I had my fair share of these delectable treats. You know how the dining halls in college are an all-you-can eat smorgasbord of food? Well, I ate all of the s’mores bars that I possibly could. And because all-you-can-eat apparently wasn’t enough, I also showed up early for work at the dining hall, just to fill my backpack up with the biggest portions I could find before all the other students arrived for dinner. Don’t judge… I needed enough s’mores bars to hold me over until the next Thursday. Delicious, I tell you.
After I graduated, I searched high and low for a comparable recipe so I could continue my s’mores bar binge in the “real world”. But, even with an endless supply of chocolate, marshmallow, and graham recipes on the internet, I couldn’t find one that reminded me of the bars I devoured throughout my college days. Until, I came across this one a few months ago. It was exactly what I was looking for. A simple bar using golden graham cereal and studded with chocolate chips and mini marshmallows. Just as I remembered them!
What’s great about this recipe? First, there are only four ingredients required. It couldn’t be more simple! All it takes is a box of cereal, some butter, and a bag of marshmallows and chocolate chips. Better yet? There’s no baking required. Could it be more perfect for this time of year? It is h-o-t out this summer, and I can’t even bear the thought of turning the oven on. Just like original s’mores, the flavor and texture combination can’t be beat. Unlike original s’mores you don’t need a bonfire to make this happen. Just 10 minutes in the kitchen, and you are on your way to a gooey, sticky, mallow-y treat. Perfect for year-round s’mores snacking!
