M&M Peanut Butter cookies ready for ovenWhat happens when the cookie craving comes a-calling and you are fresh out of flour and butter? You don’t waste your time driving to the store. And you certainly don’t deprive yourself of a sweet delectable treat.  Instead, you whip up a batch of these flourless peanut butter lover cookies.  That’s right. No flour required for this dessert.  All you need is some good, old-fashioned peanut butter, sugar and eggs.  And M&Ms, if you’re trying to be fun about it.  Because cookies are way more exciting when bursting with colors of the rainbow.  Does anything bring you back to being a kid quite like an M&M cookie?  Well, besides a certain blue box of mac & powdered cheese? Or Nerds? Nope, I didn’t think so.

These cookies are so simple to make.  And when you’re married to a self-proclaimed cookie monster, you need a quick and easy recipe when the monster comes around.  No rolling pin, cookie cutter, or freezer space needed.  Just one bowl, a whisk, and some baking sheets.  All of the ingredients get stirred up, then simply dropped into cookie-size* dough balls onto a baking sheet.  Take a few minutes to pop these in the oven, then pour yourself a tall glass of milk.  Because chocolate and peanut butter bliss is only 10 minutes away.

I might say that these cookies are one of the best peanut butter treats around. These are not the crumbly, dry peanut butter cookie with the fork-prong design that you may be use to. Without flour, these cookies are dense, moist, and decadent. And you can’t beat that familiar M&M shell crunch in every bite. Just the way a cookie should be.

Peanut Butter M&M Cookies

Ingredients

  • 1 cup peanut butter (about half of a jar)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1 cup M&Ms (any variety- we chose regular milk chocolate)

Directions

1. Preheat oven to 350 degrees. In a large mixing bowl, combine peanut butter, sugars, egg, baking soda, and vanilla extract. Whisk to combine.
2. Use a wooden spoon to mix in the M&Ms. Use a 1/4 measuring cup to scoop dough balls and drop onto baking sheets lined with parchment paper.
3. Bake for 10 minutes. Remove and let cool before serving.

What a stress-free way to crush a cookie craving.  So much flavor, so little time required.

* I use the term cookie-size lightly here because cookies really can be any size you like.  You may have to adjust the cooking time slightly depending on your preference.  I personally prefer a large cookie,to fit my obnoxiously excessive eating habits.  However, a smaller size cookie is perfectly acceptable, if you’re normal and like to exercise self-control.
