Roasted BlueberriesI don’t think I’ll ever get sick of eating fresh fruit during the summer months.  How could I? They are perfect with almost every meal.  Like blueberry pancakes doused in butter and syrup and whipped cream.  Or a green salad topped with strawberries and blue cheese.  Even, mango salsa accompanying a piece of fresh, grilled fish. Fruit is everywhere during the summer, and the possibilities for new creations are endless.

One of the best ways to enjoy fruit in the summer? For dessert, of course!  But, only in the summer.  Because it’s the only time of year my favorite fruits are flavorful and fresh enough to enjoy in pies, muffins, brownies and pastries.  Ok, except for apple pie (which, in my opinion, happens to be acceptable all year long).  The rest of the time, though, it’s chocolate and peanut butter for this girl.

Plated Roasted Blueberry Blondies

I’ve been seeing plenty of dessert recipes that use roasted strawberries and cherries lately, and absolutely love the idea.  What a great, easy way to impart depth and more flavor into a summertime treat!  So, it wasn’t a difficult decision to make. That pint of blueberries from our CSA share would be getting roasted.

Roasted Blueberry Blondies a la mode

Everyone knows that blueberry and lemon is an unbeatable combo. And, this combo is exactly what shines through on these blondies.  That, and the dense, chewy texture.  Think brownie texture, not cake texture. Can you taste it now?  Blondies are the alter-ego to a fudgy chocolate brownie, and this version is made with lemon sugar, then studded with the sweet pop of roasted blueberries in every bite.  I consider these to be rich and refreshing at the same time. And, it’s often that you can call a baked good refreshing.  It’s truly the perfect way to celebrate summer’s fresh ingredients and the best meal of the day.

Roasted Blueberry Blondies

Serves 9-12
Prep time 25 minutes
Cook time 25 minutes
Total time 50 minutes
Meal type Dessert

Ingredients

  • 1.5 cups blueberries
  • 1 cup light brown sugar
  • 1 lemon (zested, juice reserved)
  • 1 stick unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour

Directions

1. Preheat oven to 350 degrees. Line a baking sheet with foil, coat with thin layer of butter or non-stick spray. Place blueberries on baking sheet, and roast in oven for 15 minutes, until berries swell and begin to burst.
2. In a small bowl, combine sugar and lemon zest. Squeeze in juice from half of the lemon. Stir to combine ingredients well.
3. In a large mixing bowl, beat butter and sugar together. Add egg and vanilla, mix to combine. Add in salt and flour. Use a wooden spoon to mix, just until mixture comes together, and no flour is visible. Add blueberries, and gently fold into batter.
4. Pour into a 8 x 8 buttered pan. Place in oven and bake for 25 minutes. Blondies are done when toothpick inserted into center of pan comes out clean. Let cool slightly before serving.
